Ham and Eggy Cups

These little breakfast or lunch cups are a great way to get a nutritious KETO friendly meal when you’re on the go in the morning! Eat them fresh out of the oven or make a big batch and freeze individually and reheat as needed.
Serves : 2-4
Calories : 265 per serving

INGREDIENTS
2 tbsp of coconut oil melted or olive oil
6 slices of thinly sliced ham
6 large eggs
Salt + Pepper to taste
DIRECTIONS
- Preheat oven to 450oF
- Oil muffin tins and place sliced ham in muffins tins
- Crack eggs into medium sized mixing bowl and whisk
- Mix in any of the optional ingredients
- Pour into ham cups
- Bake for 12-15min
TAKE IT TO THE NEXT LEVEL
Margherita cups:
Add in some chopped basil, chopped grape tomatoes and shredded mozzarella.
Western cups:
Add in diced onions, diced sweet peppers and shredded cheddar cheese.
Mediterranean cups:
Add in chopped spinach, feta cheese, chopped grape tomatoes and black olives.
