keto kale caesar salad

INGREDIENTS
for salad
1 small bunch kale
1 oz parmesan cheese, grated
for rosemary & hemp almond croutons
1⁄2 cup almonds
1 tbsp hemp hearts
1⁄2 tbsp avocado oil
1⁄4 tsp fresh rosemary, chopped
A pinch of sea salt
for dressing
2 tbsp avocado oil mayo
1⁄2 tbsp apple cider vinegar
1⁄2 tbsp tamari
1⁄2 tbsp water
DIRECTIONS
1. Preheat the oven to 350 F and line a baking sheet with parchment paper.
2. In a small bowl, add the almonds, hemp hearts, avocado oil, rosemary and sea salt and mix until evenly combined. Spread the nut mixture on the baking sheet and bake for 4-7 minutes (or until the almonds are golden).
3. In a separate small bowl, whisk the dressing ingredients together until evenly combined.
4. Portion the kale into serving dishes, top with cheese, croutons and drizzle with dressing
